I have had about 1 month of Ashtanga instruction (10 years of Iyengar instruction) and am wanting a DVD to Ashtanga with.

Answer: 
If you have already had some Ashtanga instruction you are probably safe to start with the Beginners DVD and can skip the introductory poses DVD. If you find that the Beginners DVD is too fast pace it can always be exchanged for the introductory DVD. The only difference really is she focuses on form a little bit more in the first one so it doesn't move as quickly.

I'm hearing alot of about Bikram/Hot yoga - however, Gaiam doesn't seem to have this type of yoga.....

I would recommend starting with introductory poses. That way you can learn the names and proper alignment before going through the routine in the beginners practice.
